We harvest by hand, when the
grapes are at their ripest, in small crates,
to avoid any premature crushing.
Most of our harvest comes
from vines with an
average age of 50 years, wich benefit from an excellent position. Facing south and east, the "Clos des Prouges", is one of the best plots of Cru Pouilly-Fuissé, with its clay-chalk soil. We use the "Guyot" pruning method and limit our yields. The return to traditional farming methods favours the expression of the aromas of the "terroir". The vines behaviour is natural. |

Fermentations take place naturally, activated by the yeasts indigenous to our "terroir", thus giving each vintage its individuality. The ageing of our wines, is carried out on their lees , in either inox or enamel tanks, or oak casks. Because we work our wines to express their aromas to their fullest, we filter very lightly, if at all. |
